Paleo Bread

Remember the Oopsie Bread which I made and didn't quite like? Well, I came across another kind of "bread" which is LCHF-friendly.

Called Paleo Bread as it probably stemmed from the Paleo diet which is very similar to LCHF, this bread is mainly made from coconut butter, almond butter and eggs.

I used:
5 eggs
3/4 cup coconut butter
3/4 cup almond butter
1 tablespoon apple cider vinegar
1 teaspoon baking soda
a pinch of sea salt
2 teaspoons of 100% sesame powder (optional)

- Preheat oven to 180°C

- Whisk eggs well

- Mix in the coconut butter and almond butter (make sure there are no thick patches of butter left as the almond butter I used was very thick and I had to mix it longer)

- Place the remaining ingredients in and mix thoroughly

- Line your loaf pan with parchment paper and pour mixture in

- Bake at 180°C for 30 mins



















I bought the almond butter from Cold Storage under the Organic section and this 170g jar cost me $11.60. Yes! It is expensive and it wasn't the smooth buttery texture I was expecting. You could still feel the almond bits in the butter which tend to stick to your teeth.

I used up about 2/3 jar of the almond butter, which made this Paleo Bread out to be one hella expensive loaf! Hahaha.

I am thinking to remove the almond butter from the recipe the next time I make this bread and perhaps replace it with more coconut butter or something.

20 minutes in, the bread has risen (albeit unevenly, lol)
















YES!!! The bread turned out perfect and was better than what I had expected! The inside was so soft and moist; my knife went through the loaf smoothly. Check out the texture up close - looks JUST LIKE BREAD, doesn't it?

It tasted great too, although the nutty flavour of the almond was a bit too outstanding, hahaha. I am really excited that this bread turned out so well and best of all, it was fairly easy to make.

Alright, I'm gonna slap some butter on to the bread and savour it while watching The Godfather III, bye!
