Avocado Ice Cream

This is one of the easiest ice cream recipes I've done because no cooking is involved!

Avocados are one of the top recommended fruits in LCHF as they are rich in monosaturated fat and contain amounts of high beta carotene, fiber, folate and potassium but less than a gram of sugar for every 100g.

They can also be eaten raw and are a great addition to salads although in Singapore, we're more familiar with consuming avocado as a drink. Avocado milkshakes come to mind but I believe they are usually loaded with additional sugar. So if you like to to enjoy avocado as a cold treat, use them in ice cream. Best of all, this avocado ice cream has no added sugar.

I used:
3 medium-sized avocados
freshly squeezed juice from 2-3 lemons
1.5 cups of coconut cream
1 cup heavy whipping cream

- remove the flesh from the avocados and blend them with the lemon juice and coconut cream

- transfer pureed mixture to a bowl and add heavy cream

- whisk all ingredients together and it should look like this:















Now you may want to taste it first. I thought the lemon taste wasn't too noticeable in mine, so I added some more lemon juice. If you want a stronger avocado flavour, feel free to add one more in!

- place mixture into your ice cream maker to churn for 20 mins














This avocado ice cream sets pretty fast so 20 mins is enough. For other ice cream recipes, they usually need 40-50 mins. The final product should look something like this:

As usual, this is one of the recipes which surprised me. It is a truly enjoyable ice cream concoction even without the sugar! The lemon juice really plays an important part in the ice cream because it elevates the flavour of the avocados so well. The ice cream felt thick and rich and I kept wanting more, lol.

Remember to stock up on avocados if they're on sale cos an easy and delicious avocado ice cream treat is only 40 mins away!
